It might be strange, but some people think that it’s not possible for small children to like broccoli. Why not? There are lots of tasty dishes that include broccoli in their list of ingredients. One of them is “Oscar’s Delight”.
I found that recipe in a book by Annabel Karmel that I got from a friend. I decided to give it a go because the list of ingredients was very short (there are only four of them) and it was a nice way to introduced egg yolk into my Litle One’s diet. Also, that recipe reminded me of the dish I’d often cooked in my child-free time for lunch. Now it seems to have been ages ago.
We’d often buy a mix of cauliflower and broccoli for lunch. I’d boil the cauliflower for 15 minutes and the broccoli for five, then I’d fry them and a glove of garlic in some butter for about 5-7 minutes. At the end, I’d sprinkle the dish with some grated cheese and serve with a few frankfurters.
The recipe of “Oscar’s delight” differs a bit. It too includes small florets of broccoli and cauliflower, but instead of the garlic and cheese there is a courgette and hard-boiled egg yolk. I decided to combine these two recipes in one, leaving the garlic aside. Also, I added some apple, since I noticed that our Little One would eat his meal better if there was some apple. (The apple in a dish has become a must.)
The resulting dish had a nice light and soft texture, which made it ideal as a side for beef or lamb. I’d steam small florets of broccoli and cauliflower, diced courgette and apple and boiled egg for about ten minutes. Before serving I’d usually add some warm milk and cheese. At first, I used grated cheese. Now I prefer a soft cheese spread.
That dish was a hit. Our Little One hardly left anything on his plate. There were several occasions when he ate only a few spoonfuls, but I think I could put it down to him being ill at those times.
